Rio Azul Mexican Bar & Grill is located in south Palm Springs by the Drift Hotel. It’s locally owned by master chef Ernesto.

Chef Ernesto is a seasoned expert in Mexican gastronomy, with years of experience honing his skills and perfecting his craft. His culinary journey began at a young age when he developed a deep appreciation for the rich flavors and diverse ingredients of Mexican cuisine. Inspired by his heritage and driven by his love for cooking, Chef Ernesto embarked on a mission to share his culinary creations with the world.

Little Cravings: Start with table-side guacamole. They also offer an impressive nachos. For the seafood lover, order the Tostada de Ceviche with shrimp or the calamari.

Specialties: Chef specialties include large shrimp stuffed with jalapeno chili, and jack cheese, wrapped in bacon and topped with ranchera sauce. The Oaxaca Tamale is stuffed with pork, topped with a special sauce, and wrapped in a banana leaf.

Carnes: Selections include the carne asada & enchilada combo, chile verde, carnitas, anc ranachero. The pollo a la plancha is grilled strips of chicken topped with pico de gallo and your choice of homemade sauces.

Tacos: The Cochinita taco includes pork, cabbage, and red onions. The Tacos al Pastor includes pork, diced onions, pineapple, cilantro, and salsa. Other options include calamari, shrimp, grilled sirloin beef, carnitas, and grilled white fish. All are served with your choice of refried, black, or pinto beans.

Fajitas: You can order fajitas for one or for two. Selections include vegetables, chicken, carnitas, shrimp, and steak. You can also create your own mix.

Enchiladas: In addition to the traditional enchilada choices, Rio Azul offers a number of specialties. The Enchiladas de Mole is filled with shredded chicken (or cheese) and topped with homemade mole made from raisins, plantains, pineapple, onions and garlic. The Enchiladas Poblanas is shredded chicken mixed with onions and zucchini topped with poblano pepper chicken cream sauce and topped with cotija cheese.

Parrilladas: This is a specialty dish of grilled food. Rio Azul Parrilladas include a combination of grilled shrimp, bacon wrapped shrimp, chicken, grilled steak, and pork. It it served over grilled onions and bell peppers.
