What to Drink at Seymour’s, a Cozy New Cocktail Lounge in South Palm Springs
In May of 2015, restaurateur and hotelier Tara Lazar and her firm F10 Creative—owners of Cheeky’s, Birba, and the Alcazar hotel—took over the storied Lyons English Grille which had been a Palm Springs fixture since 1945. Now known as Mr. Lyons Steakhouse, the restaurant recently opened a comfortable back room bar, Seymour’s, that serves cocktails, beer, and wine. (The bar is named after Lazar’s father and some of his art is on display.)
The bar was described as a "speakeasy" when the Desert Sun first reported that Seymour's was under development, but the reality is something entirely different. “This is not a speakeasy—quite the opposite in the fact that we want to tell people about it and we want people to tell their friends,” says Steen Bojsen-Møller, an owner/partner of Seymour’s and the Beverage Director for F10 Creative. “There is no secret knock, no password or hidden entrance. It feels like you’ve come across a cozy lounge in an English manor. We also have an outdoor patio with a bocce ball court.”
For first-time visitors, Bojsen-Møller recommends two of Seymour’s signature cocktails. Pre-dinner he suggests a Pineapple Tequila Sour (reposado tequila, lemon juice, egg white, and pineapple gomme syrup—a rich, simple syrup thickened with gum arabic). Post-dinner he’s a fan of the Little Owl (rye whiskey, walnut liqueur, and IPA syrup—a beer-based syrup).
